Where are some of these default styles set? I find myself just removing them all of the time because I don't know where to change them. They don't exist in theme settings as far as I can tell.

Probably from the original toddle default set when they created the components and it just carries over into our projects

Mine too. Well I always have to remove them so it's more harm than good I think...

I imagine they’ll receive an update at some point, perhaps with the theming system that has been mentioned before

These colors and also the background color of my page, some are dark randomly it seems (homepage only by default?) and then the rest are white.

Yes it is a bug. You can set the variable in your theme and it should work. When the variable is not set it will show fallback color.
